(Sous) Chef / Independently operating cook – season 2019
What can you expect as a kitchen employee?
Saturday morning 11:00: your shift begins! You start a meeting with your team about what the day will look like, what needs to be done, who is responsible for what, how many reservations there are and as well you make sure that you are ready in time for the first orders to come in.
It is expected to be very busy today, so everyone gets a task, goes to his / her work station and gets to work. In the afternoon you have lunch orders, a variation of, for example, a baguette with egg or a plate of pasta with homemade tomato sauce. In the evening there is a more extended menu that you have designed together. You ensure that all orders that come in are processed, the HACCP is maintained and tasteful dishes are prepared for the camping guests! When it is closing time, some mise en place will be set up for the next day, everything will be stickered, the kitchen will be cleaned, orders will be placed on the list and after completion you will have a nice cold drink together with your team in the bar!
As a chef you lead the employees in the kitchen, you coordinate the processes throughout the day, you keep the kitchen stock up to standard, you carry out the final check on the presentation of dishes, but you also create new menus and dishes, make sure you have the grids to realise sufficient occupation and you cook yourself. The sous chef serves as the assistant of the chef and keeps a close eye on progress, quality and dishes. Where necessary, colleagues are instructed and the chef is informed if an ingredient is not available so the menu needs to be altered. Also in this position you cook with the rest of your team.
Whether you work as an independent cook, chef or sous chef: working in the hospitality industry is your thing! Communication with your colleagues is of great importance here, even if it is not always in your own language. You are well attuned to each other and together with the team you know how to stay calm during peak times.
